Pumpkin, Rosemary, Oat Flour Biscuit

Dry Ingredients: 

      • 2 ¼ cup Toats flour

      • 1 Tbsp baking powder

      • ½ Tsp salt

      • A dash of cinnamon, nutmeg, cloves

      • 3 Tbsp of Rosemary

      • Optional - a large dash of Nutritional yeast, or parmesan 

Wet Ingredients:

      • Combine 1 Tbsp lemon juice and ¾ cup milk (i used buttermilk but any milk or alt. Milk will work) - let sit. 

      • Mix in ¼ cup pumpkin puree after milk and lemon juice sit

Instructions:

  1. Set oven at 450

  2. Mix dry ingredients together

  3. In a separate bowl mix lemon juice and milk and let sit for 5 minutes then add in pumpkin puree

  4. Combine wet and dry ingredients

  5. Chop butter into pieces and mix into batter. Flaky butter in batter = Flaky biscuits 

  6. Use a spoon and create ½ inch balls of dough and place onto a greased pan

  7. Bake for 12 - 14 minutes or until golden

Pairs well with homemade honey butter on a chilly afternoon.
